The Italian Batard is a rustic, homemade bread known for its satisfying crackly crust and light interior with a pleasantly chewy bite. The flavor is simple and fresh, making it the perfect accompaniment for many dishes. My favorite part of this bread, (besides slathering it with butter!), is the cozy aroma it fills your kitchen with as it bakes.
Prep Time: 60 minutes
Bake Time: 35 minutes
Ingredients:
- 2 cups warm water
- 2 tsp yeast
- 5 cups bread flour
- 2 ½ tsp salt
Directions:
Add yeast to warm water in a large bowl and allow to proof. Mix the salt with the flour and combine with yeast mixture until dough is formed. Knead until dough is smooth. Place in covered bowl and allow to proof until double in bulk. Punch down dough. Divide into two pieces and allow to rest for 10 minutes. Shape into two 12” loaves. Allow to proof for about 35 minutes. Slash tops of loaves vertically. Bake at 425° until done, about 35 minutes.
